At its genesis, Union Terminal was a food business centered around diets that foment human longevity. We developed a menu of “bread and butter” food offerings - all in the vein of extending life spans through low glycemic/fasting-mimicking protocols.
Though we are still going through the permitting process, we began to look at various businesses and searched for a way to fit into our new world.
As airbnb/hotel prices plummeted something interesting happened. Local Kansas Citian’s ventured out to buy up cheap room nights in droves.
